15 gr white or black truffle (available on Just Tartufo)
200 gr fresh gnocchi
100 gr taleggio cheese
Truffle gnocchi are a great way to taste truffles, enhancing their flavor also from an aesthetic point of view. Unlike other classic combinations, gnocchi with truffles are an original dish.
While the water is boiling in a large pot, we dedicate ourselves to preparing the sauce that will accompany our gnocchi with truffles. In a pan heat the milk without bringing it to a boil, when it is at the right temperature, put part of the milk and the taleggio in the glass of the immersion blender and blend the cream, if necessary add a part of the remaining milk.
Put the fresh gnocchi to cook in boiling water, drain them as soon as they come to the surface, toss them in a pan with the Taleggio cream. It only takes a few seconds to flavor the gnocchi, pour them into a dish and thinly slice the truffle on top which, with the heat of the cream, will release its aroma and flavor.
The truffle gnocchi are ready!
